What is Monday Lunch Club ?

Is a regular “business lunch” with colleagues who teach on Mondays and enjoy having home-cooked lunch (and then coffee) together.

"We rotate who cooks and usually cook relatively easily preparable meals, accommodating dietary needs."

The emphasis is less on food and more on the communal experience.

"Sharing what we have and enjoying the time spent together, appreciating that this is not simply a place to work but also a place to meet and talk to friends."

Some Recipes

1. Cut chicken breast into small pieces and salt it

2. Slow-cook it on oil

3. Add a little sugar, a lot of curry and cinemon, raisins,

4. Wait a little until the raisins go soft

5. Mix the whole with cooked rice.

 

Serve it with canned apricot.

1. Add salt and whatever spices you want (mainly pepper for me) to the chicken legs (filleted in my case)

2. Add dried plums and canned peaches,

3. Pour the syrup the peach was in on the chicken legs,

4. Put it in the oven, covered for about 40 mins

5. Uncovered for an added 15 mins, but keep checking

(you may need less or more time)

1. Boil water for the pasta and cook the pasta as you would normally

2. Melt the butter in a deep pan, press the garlic cloves into it, then quickly toss in and fry the the sliced mushrooms (the garlic should not get burnt)

3. Add the spinach leaves and mix it 

4. Add some water and season to taste with a bit of salt, pepper and nutmeg

5. add the cream and the ground cheese, and leave it to melt a bit

6. The "seaweed" should be juicy enough to cover pasta: balance the cream + water + melted cheese
